In polygon modelling curves are generally created in the initial outline phase and then subdivided later as needed for those reaaaally smooth curves. Assuming Blender handles it the same way as Max, you can probably use a cut tool to create a face within a face, delete it, and then extrude a new 'node' to the model that can be worked on to create curves.
I agree as far as the reference. Shadow, it's clear you have vision, but it seems you have problems conveying that in a way that can be understood by others easily. We're gonna have to work on that before you go on to hardline concepts. But you should do fine as a level designer in the interim.

Methinks that concept art, for vehicles at least, should be more like this, giving a clear view of front, side, and top. Not that precise, but similar in concept.
