First of all, the Pope commissioned Saint Athanasius to codify the many different texts people had left over. There was the septuagent, the letters the apostles had sent, the Torah(?), and a bunch of others. These were all compiled and translated into Latin -- the most commonly spoken tongue at that time -- and distributed as well as any book could have been among the Nicene Church(Maybe just the Roman Patriarchate). So, the Bible contains a lot of things, it's not all literally infallible. Hell, half of Genesis(or the book after) is just a list of family names, the biggest point of Genesis is to differentiate Yahweh from the other gods of that region, by explicitly declaring him a creator, whereas all pagan gods I know of(other than possibly the Zoroastrians, but that seems to be almost-judaism anyway) are basically immortal superheros. I don't have any sources for this, but I'm 99% sure it's correct, and neither does Kobialka, so I'll leave it at this.

Also, plenty of stuff in the bible has been proven. That the world is round, for instance.
Publishers? I dunno. If you mean who takes in the money voluntarily given in tithes, then the Church, which still does the most amount of charity of any organization in the world, and it's made of humans(physically) like anything else, so I don't see the problem here.
